Savory Zucchini Bread

The following recipes are either wheat free, dairy free or nightshade free.

Savory Zucchini Bread – Wheat Free/Dairy Free

  • 1 ½ c. organic rice flour
  • ½ tsp baking soda
  • ¼ tsp baking power (alum. Free)
  • ½ tsp sea salt
  • ½ c. organic olive oil
  • ½ c. organic olives (pitted Kalama)
  • ½ c. organic grape tomatoes
  • 1 Tbl organic basil pesto
  • 3 organic eggs
  • ½ c almond cheese graded
  • ½ c organic rice milk
  • ¼ c sunflower seeds
  • 1½ c zucchini

Mix dry ingredients together, then add the rest one by one. Mix well. Bake in loaf pan at 350 degrees for one hour..
